Gluten free, take 2
Gluten is very very bad for me. It sends my entire system into disarray, from my skin to my digestive track. Anyhow, I have found it much harder to be gluten free here in NS then in Ontario with less product selection for alternatives. That being said, I seriously have to make a better effort, my body needs me to.
Tonight for dinner I made sesame crusted salmon with baked Zuchini and a buckwheat pilaf. The buckwheat (aka as Kasha) turned out spectacular. I first toasted it with butter and egg, then added 1 cup chicken stock, 1 cup water, sliced mushrooms, salt and pepper and boiled until the Kasha was nice and soft, then I added a tablespoon of soy sauce and voila. Delish.
This weekend it’s gluten free banana bread and peanut butter energy bars. Stay tuned.
